The Starter Round Winner – Salad Nicoise

And we’re off with the starter of Great City Chefs, the atmosphere in the kitchen was quietly competitive. We had Ben from Allen & Overy, Shaz from 30 Euston Square, Emily and Frederico from Exclusive Events Team and Andrew and Mario from One Moorgate Place. It was the battle of the Burratas with two starters featuring the Italian soft cheese, although their central ingredient was the same, they couldn’t have been more different. The first, from Allen & Overy heralded the Jersey cow with homemade truffled curds and granola. It was delicious and a surprising flavour combination. The second, from the Exclusive Events team incorporated the classic flavours of Burrata and tomato with bergamot, the tomatoes were dehydrated and their flavours were deliciously intense. One Moorgate Place took on tradition of Mexican street food to create a taco shell with textures of sweetcorn and smoked tomato.

But the winner of our starter round came from 30 Euston Square with Shaz’s Salad Niçoise. When our judges first saw the menu they were unsure how this humble salad could be elevated to a banquet level, but how wrong we were! The dish was designed beautifully and the flavours were ingenious, it looked nothing like we expected. Our judges were blown away by it and it was a clear winner for this round!

The competition has stepped up a level, who will be crowned king or queen of fish? We’re eager to find out…
