Seasonal Pumpkin Soup


Want an ideal comfort food which is healthy and comforting? Introducing our Seasonal Pumpkin Soup, perfect for a quick lunch or a sit down dinner to keep you warm during the winter months! 



  • 1 medium Pumpkin
  • 1 Onion 
  • 3 garlic cloves
  • 1 large Potato of your choice
  • 1 Litre of Vegetable Stock 
  • 1 tsp of Cinnamon
  • 1 tsp of Cayenne pepper
  • 1 tsp of Nutmeg 
  • 1tsp Thyme 
  • 1 /2 tsp salt 
  • 200g single cream

Additional ingredients for an added kick : Ginger, Tumeric, Paprika, Carrot 



Halve, quarter and cut the pumpkin into manageable Chunks. Do the same with the potato. Cook until chunks are tender. Then add the garlic, salt, pepper and thyme. Add the vegetable stock, bring to the boil and simmer for a further 30 to 40 minutes. 

Once cooked, remove from boil and place into a large bowl of your choice. Using a blender, blend until soft and add all remaining additional spices. Finally, stir in the cream until smooth and creamy. 

Garnish with pumpkin seeds and serve with a crusty bread of your choice!
